As quickly as Brisbane’s inner city is being urbanised, a new wave of food and beverage operators is taking advantage of the opportunities presented by new precincts and spaces.

Hello Please is the latest. Opening for the first time on Friday night in a shipping container on Fish Lane, the street-style Vietnamese eatery has brought an open space beneath the busy South Brisbane train line to life.

The venue is a collaboration between Daniel Ward from The Stables Craft Bar & Kitchen and high-school buddy Maris Cook, who comes to Hello Please after stints at Pearl Café, MoVida and Gingerboy in Melbourne.

While living in Melbourne Cook frequented restaurants such as Saigon Sally where robust Vietnamese food meets good design and service. “There’s nowhere in Brisbane quite like it,” explains Ward of their concept.

“Part of it was finding a site that is authentic and urban,” he continues. “I like that it is pretty much in a car park and there is a train track going by.”

With street art by Drapl, festoon lighting and greenery, the space is now far from the austere empty lot that once sat opposite Julius and Maker.

Fittingly, the menu focuses on street-style food, including pork-belly bao, chicken pho, dumplings, rice paper rolls and freshly made bánh mì. Lunch is geared towards fast, grab-and-go eats. The dinner menu is meant for sharing with cocktails, craft and Vietnamese beers, or wine.

“I don’t think having a massive list of items on the menu is always a good thing,” Ward says. “Sometimes people get stressed over having too many choices, so this way we can keep it short and we can always change it around.”

Space is limited to bar seating and the communal dining area, so for now the plan is to manage evening service in two sittings and takeaway. It’s a new style of dining for Fish Lane and complements the mix of venues already in the precinct.
