By the time Dario Manca was 16 years old, he was already working at Michelin-starred restaurant Villa Crespi under prominent Italian chef Antonino Cannavacciulo. Manca grew up in Omegna in northern Italy and fell in love with the kitchen while cooking with his family each Sunday.

Throughout his career, he’s cooked alongside Gordon Ramsay, Heinz Beck, and Giovanni Pilu (of Sydney institution Pilu).

Earlier last year, Manca opened degustation fine diner Attimi in Paddington. It was one of the year’s best new openings.

Manca spoke to Broadsheet about the local spots he goes when he’s feeling homesick and the overseas restaurant that’s on his bucket list.

Where can you find the best coffee?
Bellissimo Coffee in Bulimba is my go-to.

What about lunch on the go?
It’s more like a brunch I guess, but Florence cafe in Camp Hill has a funky, different, tasty brekkie menu that I love, and the service is great.

What’s your favourite snack in your city?
Bar Miette in Brisbane CBD. I love the mortadella stack.

What’s your go-to if you want a quick takeaway dinner?
Ramona Trattoria in Coorparoo.

Where’s the ideal spot for a date? Why?
I’m biased, but I think Attimi is a perfect spot for a date night. Although, if I’m not self-promoting, I believe Essa is great. The layout of the restaurant means each table has great privacy. And of course, the food is great.

What is your favourite dish to cook at Attimi and why?
My favourite is the Queensland coral trout with prosciutto, cardamom sauce, chilli oil, and grapefruit. It’s a dish that is close to my heart. It’s inspired by “cucina povera” (the food that the poor of Italy used to cook). We creatively use every part of our 24-month-aged prosciutto to craft a decadent sauce from what would normally go to waste. This mindful approach turns simplicity into luxury.

If it’s a special occasion, where are you booking? What are you ordering?
I would say Exhibition. Tim is doing great things. I’d order the set menu experience with the matching wine.

Do you have a go-to for a long lunch? What are you ordering?
Short Grain, not only because Martin is great at what he does and a good friend as well, but also because the environment is relaxing and beautiful. I’d recommend you order a Margarita and dig into the set menu.

How about a meal with a big group of family or friends?
Greca at Howard Smith Wharves is always a crowd favourite.

What’s your bucket-list restaurant? (Anywhere in the world.)
Somni in LA. It is hands-down one of the best food experiences you could potentially imagine.

If you’re after something sweet, where are you heading and what are you getting?
C’est du Gateau in South Brisbane. The owner Sebastian is a master of baking – and a good friend of mine. His croissants are an absolute must-try.

Is there a hidden gem that you think is great?
Scugnizzi – one of the best pizzas in Brisbane for sure!
