The popular pop-up igloo bars are returning to Customs House for winter, but this year there’s a difference.
Opening this Friday, the 2019 pop-up is looking to capture the feel of an Aspen-themed winter paradise, partnering with Veuve Clicquot for apres-ski cocktails and winter eats such as ocean trout toasties with creme fraiche and fennel marmalade, and whole baked brie with thyme and crostini. And that’s before you get to the menu’s killer app: a citrus-poached Moreton Bay bug croissant with lime mayo, chips with parmesan and truffle aioli, dished up with a glass of Veuve for a very reasonable $40.
The Veuve Clicquot Chalet pop-up will run Thursday to Sunday every week throughout winter. Walk-ins are welcome but you can book your own igloo here.
