“It’s just hard to get a decent sandwich, isn’t it?” Joe’s Deli founder, Patrick Killalea remarks to Broadsheet. Luckily, Killalea is aiming to fix this problem.
“When we opened on the Gold Coast last year, we had people flying in from all over, up from Sydney and over from New Zealand. The support has been brilliant,” Killalea explains. Joe’s Deli opened in Pacific Fair just over a year ago on August 6, serving up classic deli sandwiches with an Australian twist alongside Margaritas, natural wine and house beers.
It is a concept that Killalea has been developing for years, influenced heavily by his time living in Sardinia and working as a chef in the US, where he came to love American-style loaded sandwiches. The menu consists of American classic subs such as the Original Deli, layered inch by inch with salami, mortadella, ham, provolone, pickles, red onion, iceberg lettuce and mustard; the Famous Meatball Sub stacked with pork and veal meatballs, Napoletana sauce, parmesan, Swiss cheese, aioli and salsa verde; and the Lobby Roll, an indulgent mix of lobster, crab, kewpie mayo, black caviar and chives.

“There has been a huge resurgence in people’s love for a deli,” says Killalea. “People are turning up at 10am and waiting in line, everyone [is] super excited.” Killalea’s blend of American indulgence and Italian quality ingredients creates a special offering.
Alongside the daily menu there will be special collaborations with local bakers Bread Social. “They have the best ciabatta,” Killalea says excitedly, which he will be using to make the Brissy Cheesesteak with dry-aged rib eye, lobster, onion jam, provolone and truffle aioli.
Joe’s is named after Killalea’s father and embodies his values: “old-school, hardworking, humble”. The Albert Street store, Joe’s second outpost, opened on September 2. As a nod to its American roots, the fit-out is nostalgic with leather booth seating, red raw brick and beveled glass countertop.
