After opening a 150-seat cafe and roastery in Newstead last year, the team behind Melbourne coffee giant Industry Beans always intended to open a second site in the CBD – even if Covid meant owners Trevor and Simon Simmons couldn’t be in Brisbane for it.

“It was pretty weird, I’m usually pretty involved in the [fit-out], managing builders and helping install coffee machines,” Trevor tells Broadsheet. “With this one there was a lot of pre-planning and I feel we were ready to go. It was actually the smoothest opening we’ve had.”

Industry Beans first opened in Fitzroy in 2013, before opening a second cafe in Melbourne’s CBD and another in Sydney’s CBD. Last year, they marked their entry into the Brisbane market with an ambitious 700-square-metre cafe and roastery in Newstead. Their new espresso bar in Brisbane’s CBD, which opened in early-November, is much smaller scale.

A large white bar is fitted with La Marzocco Modbars – a coffee machine that’s hidden under the bench – coffee grinders, and a small cabinet filled with croissants, brownies and other baked goods from Chouquette. A large retail section includes 10 different coffee blends and single origins, coffee equipment and cans of cold brew. There are just 10 seats; the cafe is geared towards takeaway to service busy office workers. Trevor says the goal is to get coffees out in under two minutes, even during busy periods.

Melbourne architects March Studio (Aesop, Jackalope Pavilion) and fit-out specialists Unita (Munich Brauhaus, Betty's Burgers) were behind the fit-out, which was specifically designed to maximise speed and place the focus squarely on the coffee. “The way we design the stores is that everything is on show,” says Trevor. “It’s a pure, white, minimalist design and we do that to showcase the product and the people in it.”

The espresso bar uses coffee beans roasted at the Newstead venue. The Newstead Blend and Seasonal Blend are used for milk-based espresso coffees, and a range of rotating single origins are used for both espresso and filter. There’s also signature cold brew drinks such as the Bubble Coffee (cold brew coffee, coffee-soaked tapioca pearls and house-made condensed milk), and the Fitzroy Iced (cold brew, Wattleseed, organic panela and milk of choice).
