Matt Moran has announced he’s taking his inner-east Sydney paddock-to-plate restaurant, Chiswick, to Byron Bay for the 2018 Splendour in the Grass festival. He’ll be erecting an 80-seat pop-up in a secret lakeside location for a leisurely long-table lunch.

Moran’s move is in keeping with the recent trend of increasingly upmarket music-festival fare, with organisers recruiting big-name chefs rather than opting for simple staples such as dagwood dogs and hot chips. The world over we’ve seen the nascence of a more stylised, curated approach to festival dining. And while there’s always a place for greasy burgers and fries between sets, top chefs and restaurateurs are raising expectations.

In this case a $100 ticket gives you access to a Volkswagen chauffeur to the festival grounds, as well as reserving you a seat at the communal table for a two-hour, three-course meal curated by Moran’s team – Chiswick head chef Tom Haynes and ex-Chiswick at the Gallery head chef Laura Baratto, who will both be on site.

“The inspiration for Chiswick really came from my time growing up on a farm,” said Moran in an official statement. “Our planted-to-plated philosophy is a great fit for the Byron region.”

The menu will feature cos lettuce, spanner crab and avocado tacos; family-style lamb shoulder served with a chunky eggplant-and-red-pepper chutney and flatbread; and roast chicken done on a beer can with baby corn and pine nuts.

A Botany Bar will be erected, where you’ll find gin and tonics, jugs of Pimm’s, and “Splendour Coladas” with roasted pineapple, coconut and rum. The Kings Dead Tonic, which comes with cucumber-infused vodka, elderflower, grapefruit, basil oil and tonic water, will also be poured.
