The long-awaited Agnes will launch Saturday, but not as a restaurant. Instead, owners Frank Li, Bianca Marchi, Tyron Simon and Ben Williamson will run the Fortitude Valley eatery as a pop-up bakery and bottle shop.
The federal government’s Covid-19 shutdown of food and beverage venues put the kibosh on the woodfired Agnes’s March opening date. Its restaurant debut is now on hold until the coronavirus crisis passes.
So instead, chef Williamson and his team will be operating the venue as a bakery, woodfiring breads, pizzette and pastries. Agnes will also use its downstairs bar as a bottle shop, the venue opening 7am to 7pm, Wednesday to Sunday.
Its debut contactless takeaway service kicks off at 7am Saturday morning.
