Celebrated French restaurant Montrachet may be closed during the Covid-19 pandemic, but you can still get your fix of its classic French cooking after owners Shannon and Clare Kellam introduced a dine-at-home menu. The Kellams launched the delivery and takeaway service on March 23 – the same day the federal government implemented a shutdown of all restaurants, bars and clubs – and it’s proving immensely popular.

“We’re in our fourth week,” Shannon tells Broadsheet. “Last week, some days we had up to 1000 sales a day.”

Montrachet has eschewed a straight take-away menu and opted instead for a cook-at-home model. The restaurant’s chefs are using the Kellams’ new commercial kitchen, The Kneadery, to prep, pack and refrigerate the meals, which are then sold with instructions for cooking at home (there’s also a bunch of neat instructional videos on Montrachet’s Facebook page).

“The meals [cooked] at Montrachet, you could deliver, but they wouldn’t necessarily travel well,” Shannon says. “So we had the idea of doing the meals of Montrachet in three to four easy steps. [You then] build it together and finish it yourself.”

Many of the restaurant’s cherished dishes, such as the double-baked crab souffle, Black Angus beef fillet and its celebrated seafood bouillabaisse, are available for pick-up and delivery.

“All of the feedback from people is that finishing their food at home, it’s a bit of a release and takes your mind off the world,” Shannon says. “That’s always been what Montrachet is about.”

Key to the take-out success, Shannon says, is the enormous 1000-square-metre Kneadery, which allows the Montrachet chefs to pump out an enormous number of meals, alongside teams preparing bread and pastries for the Kellams’ other venues, King Street Bakery and Mica.

“It’s the way of the future, for restaurant groups to have their own central kitchen,” Shannon says. “It’s an amazing facility. Just the savoury part of the kitchen where we prep for Montrachet and Mica is double the size of the entire Montrachet restaurant.”

Montrachet is also selling an abridged selection of red, white and sparkling wines, as well as beer, and bottled Negroni and cucumber and elderflower Collins cocktails. All orders must be in before 7pm for next-day delivery or collection.
