Gold Coast cult ramen institution i like ramen is popping up in Brisbane later this month.

For three weeks the vegan ramen joint is taking over Sundays at The Coop Bistro in Fortitude Valley to dish up plant-based concoctions such as spicy kimchi ramen, white miso ramen and shiitake and soy ramen, topped with everything from bok choy and fried tofu to roasted tomato and vegan chicken.

All ramen comes with spring onions, fresh sprouts, fried shallots, roasted seaweed and black sesame, and you can opt to build your own bowl if you’re that fussy. The full menu includes sides such as panko-crumbed mushrooms and meat-free po’boys.

The pop-up kicks off August 19. This is expected to be big so The Coop is keeping it as a walk-in only affair, although groups of eight or more are encouraged to book by emailing here.
