Brisbane locals no longer need to crawl up and down the Bruce for burgers and “concretes” now that a taste of Noosa has edged closer to the CBD.

Burgers made by Betty have been sold in Noosa since the 1970s, but it’s not Betty Wallace’s famous snack van that’s rolling down the M1. Instead, the coincidentally named Betty’s Burgers, from hospitality guru David Hales, is launching its seventh store at Westfield Chermside’s new food precinct today.

The 1950s-themed burger shack is an ode to another Betty – Hales’s late grandmother, Betty Anderson. “Back in the day they didn't have lamb burgers and fish burgers and triple-stacked burgers,” director of operations Nik Rollison says. “So that was the concept behind the design and inspiration – just serving a simple menu like it would have been done 60 years ago.”

The Sunshine Coast burger brand’s menu is based around four proteins – the classic beef patty, fried chicken, mushroom and crispy pork belly. You can swap in a gluten-free bun or order it bare (no bun, just a lettuce wrap). There’s also onion rings or fries.

Betty’s is well known for its house-made frozen-custard ice-cream, or “concretes”. Pick basic chocolate or vanilla, add custom mix-ins, or order pre-designed flavours such as hot-fudge doughnut and passionfruit-ginger crumble. The frozen custard is also used in Betty’s thickshakes.

Designed by Paul Kelly Design, the large 100-seat store features the brand’s signature pastel colours and weathered beach look. Orange and white wire chairs, plants hanging in macrame holsters and pink Italian tiles fill the retro interior and sunny outdoor patio. The space is fully licensed and will serve local craft beers along with wine, cider and soft drinks.

“We're bringing the beach to Brisbane,” Rollison says. “We want to bring that warm, leafy, beachside outlook to everywhere we go.”
