Chef Simon Hanmer has reignited his creative partnership with longtime collaborator and friend Jake Pregnell, joining Pregnell on the pans at Fortitude Valley restaurant Little Valley.

Hanmer worked with Pregnell to open the enormously popular Rick Shores in Burleigh Heads; together they prepared the early menus that would see the restaurant go on to win national acclaim. Most recently, he has been working at Spice Bar on the Sunshine Coast.

Hanmer has already started work at Little Valley, helping Pregnell launch a new menu for the restaurant. It includes dishes such as a kangaroo tartare bound by bone marrow and finished with pickled chilli and native saltbush; pork belly ham with roast chilli paste, garlic and cucumber; and a prawn “toastie” with mozzarella and smoked onion sambal. On the dessert menu a chocolate parfait incorporates tea tree mushroom, which is commonly used in Chinese medicinal teas and stocks.

“I like introducing people to things that they're not going to get at home,” Hanmer said in a news release. “That to me is what coming to a restaurant should be about. Getting something that you can't do at home, but without complicating it.”
