Coming Soon: Only to Open in South Brisbane

While there are many Brisbane cafes focused on serving fast, on-the-go espresso, Only co-owner Paul Crossland says he prefers to slow things down.
“We’re super interested in showcasing single origins and the story of the coffee, and you can’t do that in a fast-paced, espresso-based environment,” Crossland says. “You can only really do that when you have a space built with that in mind.”
Crossland is now preparing to open a third Only outlet just off Fish Lane in South Brisbane. With Only’s original Queen Street location powering through the CBD trade and a smaller Woolloongabba spot looking after students who live in the UniLodge development upstairs, Crossland and co-owner Arthur Graczyk are eager to use the South Brisbane premises as an opportunity to get more expansive, serving signature pour-overs and batch brews while sharing the background behind their single-origin coffee.
“Coffee that comes from all these different locations and origins has such awesome stories around [it],” Crossland says. “With our coffee, we can tell you exactly which locations they come from. I think that’s really special.”
Only South Brisbane will open early next month with a coffee menu similar to Woolloongabba’s, which has numerous espresso and pour-over options. Five Senses will be used exclusively for coffee, accompanied by a straightforward assortment of pastries from Danny’s Bread.
For the fit-out, Matthew Reynolds of Majr Designs is incorporating new elements to set the venue apart from its CBD and Woolloongabba siblings, with a key feature being a pastel-pink tiled bar and floor. “Some of the aesthetic choices are going to make it really stand out,” Crossland says.
Only will open at 58 Hope Street, South Brisbane on August 10.
