Dan Gregory has honed his craft at some of Australia’s top bars, from Eau de Vie in Sydney and Black Pearl in Melbourne to Brisbane’s The Gresham and Canvas Club.

This September, the acclaimed bartender is opening his own venue. He’s partnering with former colleague Brennen Eaton (Alba Bar & Deli, The Gresham) and longtime friend Lachlan Henry to open Barry Parade Public House in Fortitude Valley.

“It’s a natural progression for most people in hospitality to grow and open a venue,” Gregory tells Broadsheet. “I think it’s very important to do it with the right business partners. We all have the same outlook on what we want to produce.”

The trio envision Barry Parade Public House as a neighbourhood-centric bar with an equal focus on cocktails, wine and beer. “Cocktail bars have a bad habit of letting the wine and beer selections fall to the wayside,” Gregory says. “You can’t get away with that anymore. There’s a big push for having a good overall selection, even if you’re categorised as a cocktail or whisky bar.”

The venue will also showcase a selection of vintage spirits that Gregory has bought at auction over the past 15 years, rare finds that will be prominently displayed on the back bar.

The food menu will highlight comforting European-style dishes with a Creole twist. Think beef tartare with a Louisiana-style pickled quail egg; pan-seared crab cakes with roasted jalapeno tartare sauce; and a duck and Andouille gumbo. At the bar, they will be slicing deli meats to order (including LP’s smoked mortadella).

The bar’s design will celebrate the building’s original 1920s features, such as terrazzo flooring, while maintaining a bright and clean aesthetic. It’ll be open during the day, with al fresco seating on the footpath that’s sure to be particularly popular during the warmer months.

Barry Parade Public House will open at 122 Barry Parade, Fortitude Valley in late September.
