It is almost impossible not to walk into Botero if you're passing by. Adelaide Street’s newest venue opened quietly on Monday. It’s in one of the street’s oldest premises – a stunning, three-storey, heritage-listed building dating back to the 1920s. Complementing the brick exterior, inside it’s all about bare concrete, and fittings of brass and copper.

If the architecture doesn’t get you, the smell of coffee will. Botero will eventually offer a choice of five of the cafe’s own blends and a rotating single origin. Owners Danny and Jill Young, along with the husband-and-wife duo of manager Bonnie Duyker and head barista Quentin Le Naour, started out with a roastery and cafe in Maclean in northern New South Wales. The team is determined to serve caffeine with a story. “Being coastal we’re laid-back,” Duyker says. “We’re trying to bring that to the city: remembering people and welcoming [them] with happy faces.”

Wellington-born chef Tom Monk serves breakfast and lunch through the week, and dinner and tapas on Thursday and Friday nights. Monk has experience working across numerous cuisines in restaurants in New Zealand, Canada, England and Australia, so Botero’s menu is varied but versatile. You might try buttermilk waffles with coconut and lime butter for breakfast; potato-and-pea fritters for lunch; and pulled pork with kimchi for dinner.

Best of all the staff gets a kick out of what it’s creating. “The best places we’ve ever worked are where we’re all friends and family,” Duyker says. “We don’t believe in hierarchies – every single person is an important cog in the wheel, and without that person it’s not a whole experience.”
