Botanica Real Food made salad exciting again. And now you’ve got double the options for taking away some wholesome fare.

Opening yesterday in Teneriffe, after months of anticipation, the second iteration of Botanica feels just like the original. The fit-out is instantly recognisable, and the menu features crowd favourites, including the kale and cauliflower salads, and a few new additions.

“We’re sticking to the formula that has worked so well for us – it’s real food, takeaway,” says Alison Hutley, who created Botanica alongside husband Brett. “How it will differ is predominately in the volume we’ll be able to produce.”

In addition to 19 rotating salads, there are also breakfast boxes (with a gluten- and dairy-free option); the full range of gluten-free cakes; and baguettes and loaves of sourdough. In July, a range of takeaway soups will be introduced to get you through Brisbane’s brief winter.

With a kitchen the size of the entire Red Hill outlet, Botanica Teneriffe will be able to tackle larger catering jobs. Red Hill turns over an impressive 10,000 kilograms of produce every week; Teneriffe should easily top that figure.

“It’s an extraordinary volume of vegetables that we go through, and it’s probably one of the most satisfying things for us when the produce arrives every morning,” Hutley says. “We break it all down, turn it into salads and then the next day that same volume of vegetables arrives and it starts all over again.”

Botanica first opened in Red Hill in early 2013. Hutley admits she was initially reluctant to open a second location, but the demand from customers was there.

For the Hutleys, this isn’t the start of an empire. Rather, it’s a continuation of their philosophy of celebrating plant-based food. “We wanted to focus on maintaining quality and open the second store when the time was right,” Hutley says.
