It’s been just over three months since the opening of Grown, Sacha Muchall’s cafe serving highly evolved brunch options that are helping redefine people’s expectations of vegan cuisine.

But Muchall isn’t stopping there. This week he announced he’s teaming up with award-winning Urbane Group chef and co-owner Alejandro Cancino to create a series of pop-up vegan degustation dinners.

“We wanted an event that would be something special, and I know that Alejandro wanted to do more in 2018 on vegan dining and plant-based cooking,” Muchall says. “This is an opportunity for him to do something that he’s really passionate about – something that he finds progressive – and for him, and us, to grow.”

Securing Cancino’s services is something of a coup for Muchall. The Argentinian-born chef is best known for his vegan degustation menu at Urbane, which has shifted the CBD fine diner towards the cutting edge of plant-based dining in Australia. The menu at Grown will be entirely new but at the same fine-dining level Cancino is known for.

“Alejandro has had an ongoing consulting role at Grown and is helping us to be the best we can,” Muchall says. “We have a good relationship with him and we hope to continue that. We want to keep Alejandro in the business where we can keep moving forward – he’s a great asset to the team.”

There is a capacity to seat 16 each night. The service is seven courses with an option for matching wines or a non-alcoholic pairing. The menu will be focused on produce and flavour and includes dishes such as a peach dish with verbena, and Madagascar beans from The Falls Farm with kipfler potato and saffron.

“The main thing is getting people to try [vegan food],” Muchall says. “And letting people know what we’re doing.”

The pop-up will also help draw attention to Grown’s dinner menu, which launched a few weeks back. The cafe’s head chef, Nathan Kirk, will also be looking to incorporate some of the degustation dishes into the regular menu.
