Until last month, it wasn’t easy to find fluffy brioche buns from Bowen Hills breadmakers King Street Bakery, sausages and patties from Meat at Billy’s, and cakes and pastries from patisserie Jocelyn’s Provisions all in one place. But shoppers in Brisbane’s Ascot will have easy access to all these local goods at the city’s first Coles Local – a somewhat snazzier version of the supermarket chain, with a highly selective range of local produce.

Coles Local Ascot also has a Japanese mochi ice-cream bar; self-serve barista-quality brews from Melbourne’s DC Specialty Coffee Roasters; and a mini-macaron bar. Plus, ready-made meals and even a DIY treats station for dogs – including doggy ice-cream.

The concept has proved popular in NSW and Victoria, and shoppers in Brisbane’s north-east will notice a nod to nearby landmarks at the new store, as local artist Sophie Beer has painted a mural of neighbourhood icons such as the Eagle Farm Racecourse on the store’s exterior.

Like shopping in a local grocery store, there are also recycled customer carry boxes available – but also energy-efficient fridges, a dedicated eco-friendly product section, and trolley baskets made from recycled materials, and all the staff uniforms are made with 65 per cent recycled bottles.
