Stanton combines contemporary loft-style interiors with a bunch of vintage elements to create a dining experience that's both luxurious and approachable.
Owner Fabian Rebelo wanted to harness elements of the Brisbane CBD while at the same time offering visitors an escape from the city. Central to this ploy is the venue’s outdoor balcony, which almost feels like it floats above the mall.
Stanton is eclectic, with brown leather armchairs, bespoke wallpaper, blue velvet couches and antique furniture scattered throughout. Persian carpet, mosaic tiling and timber floors separate the lounge, dining space and curved bar, while a pair of matching 1940s French basket chandeliers hang from the ceiling.
Just as the fit-out was designed to reflect the city, Stanton’s ambitious menu is intended to zero in on Brisbane’s love of a good breakfast cafe. Dishes include a mushroom medley, sautéed and served with double whipped cream on sourdough toast; and a green breakfast featuring poached eggs, avocado, kale, broccoli, peas, tahini and pepitas.
On the lunch menu, a double-baked crab soufflé with blue swimmer and prawn bisque is a standout. Elsewhere, Stanton’s large stone oven is doing a keen trade in Napoli-style pizza with toppings including spicy salmon and olives, pancetta and potatoes, and margherita. The lunch menu roles into a dinner service Wednesday through Sunday.
Coffee is Stanton’s house blend, roasted in Sydney. Otherwise, the curved timber bar dishes up a wine list of both boutique and major producers along with an extensive cocktail list.
