Ballistic Beer Co Salisbury
Every beer and cider on Ballistic’s 12 taps is made on site. There are four main beers, including the Australian Psycho IPA, as well as a set of rotating taps, which could include an American stout, golden ale or coffee brown ale.
Ballistic is about bringing people together. On weekends this is really on show – families picnic on the grass, kids ride their bikes around, and adults converse over a beer that was brewed just metres away. There’s no kitchen on-site, but there are food trucks and musicians on weekends to keep everyone fed and entertained.
Founder David Kitchen worked as an accountant, banker and diplomat before driving past a local home-brew store and buying it. He had no knowledge on the topic and drank “crap beer”, but one store soon turned into seven. An appreciation for home-brewing developed.
Originally, Kitchen wanted to create a facility that helped home-brewers up-scale their production and start producing commercially, but the economics weren’t viable. So in late 2016, he teamed up with brewer Lachy Crothers to create Ballistic Beer Co instead. They began entering and winning beer competitions, before they opened their venue in April 2017.
Kitchen was drawn to the site’s large tin shed (built in the ’70s) and unusually leafy surrounds. The brewery is named in honour of Salisbury’s history as a munitions-producing hub during World War II.
