You can’t beat good-old-fashioned customer service, and it’s that mantra that Billy Gibney embodies with his butcher shop, Meat At Billy’s. The Ashgrove store has been a working butcher shop since the ’70s, and today Gibney and his team continue the trade proudly here and at a newer location in Paddington.
Sourcing meat from nearby Darling Downs has allowed Gibney to tap into the rising "paddock to plate" food trend. Meat is in abundance here, with all the staples you’d expect.
Billy’s is renowned for its sausages – there are 20 flavours on offer – but it’s the unique products that really excite customers. On request, the staff can source whole beasts, such as suckling pig and any number of game birds. It also has the knowledge and equipment to prepare and cook them.
Beyond the meat cabinets, shelves are stocked with a variety of gourmet deli and grocery items, knives, take-home meals (all prepared by in-store chefs) and a selection of boutique wines.
The butchers are always eager for a chat, and often finish a sale by opening the door for you as you leave.
