Fair Seafood is a sustainable retailer, kitchen and bar in the Adelaide Central Market by Angler’s Amanda Prance and executive chef Sam Prance-Smith. And given who’s behind it, it’s fair to say that Fair seafood is a pretty big deal for South Australia.

The aunty-nephew duo are behind the only seafood wholesaler and retailer in Australia to provide 100 per cent traceability on all its products. The team works with small-scale fishers so they can tell you where, when and how the fish was caught. The goal here is to try and steer customers away from species that are over-fished.

The offering depends on what’s hauled in – everything from King George whiting to lesser-known hussar. Two dry agers are put to good use on the likes of Ora King salmon and barramundi. In addition to sourcing through SA fishery Fair Fish, Fair Seafood also supplements its catch with seafood from Sydney Fish Market’s trading platform SFM Blue to ensure enough supply.

Naturally, the dine-in menu changes constantly too, but you should always be able to get dry-aged sashimi and fish and chips (with “Heston-style” hand-cut potatoes and Coopers beer batter). Breakfast is also an option – think eggs Benedict with sand crab and smoked Ora King salmon rillette.
