Captivated by the simplicity, soul and flavour of Cuban street food, Mattis Vanzati returned to Australia eager to school local burger-boomers in casual cuisine.
Partnering with real-life hermano Lukas Vanzati, he leased a one-in-a-million beachside outlet, and opened this tiny takeaway bar on Henley Square. It’s not cultishly Cuban, but it’s good – real good.
Their menu is based around Cubanos – toasted sandwiches with inventive fillings, such as citrusy mojo chicken, pulled pork, beef, refried beans and more. Equally popular are the franks – next-level hot dogs swathed in pickled cabbage, teriyaki sauce and wasabi aioli; or mash, mustard, dill gherkins and fried shallots.
The Vanzati brothers complete the menu with wings, calamari and fish ’n’ chips (because beach). There’s something about their lime salt that impels you to just Havana-nother bite.
Got a hangover? Good. There’s a fortifying breakfast menu just for you that runs until whenever you feel like showing up. There’s also coffee, Mexican sodas and handmade desserts – try third brother Liam’s Portuguese tart.
