A Moment For: Sugar Man’s Boozy Tom Collins Sorbet

Summer has officially arrived. It’s hot, it’s sweaty, it’s celebratory. It’s the perfect excuse for a little treat.
If you can’t decide between a frosty ice-cream or a bracingly cold cocktail, The Sugar Man is here to help. The team has selflessly vowed to always have a cocktail sorbet on the menu.
Right now, it’s a boozy Tom Collins-inspired serve.
“The inspo for any of the flavours we do is always local produce,” says co-owner Alex Crawford. “In this case, it’s our favourite cocktail: Tom Collins, which is essentially lemon, sugar syrup, gin and soda water.”

How: When Crawford says he’s inspired by local produce, he practices what he preaches. This scoop has South Australia up the wazoo.
“We juice and zest fresh lemons grown in Riverland. Then, we infuse the lemon zest in Never Never Triple Juniper gin overnight. When we go to churn, it’s the fresh lemon juice, sugar, locally-made Mischief Brew lemonade and the lemon zest-permeated Triple Juniper gin. We’re just letting Mother Nature do its thing with good local produce,” says Crawford.
Cost: One scoop for $7, two scoops for $9 and three scoops for $11.
Where: The Sugar Man, 197 Hutt Street, Adelaide
When: It’s available until December 7, 2025, then it’ll be replaced with a new cocktail flavour.
