First Look: Gang Gang on Holland Brings Mozzarella Spring Rolls and Build-Your-Own Burgs to the City

Opening Gang Gang on Holland in The Market Shed is a full-circle moment for Gang Gang co-owners Nina and Morgen Wynn-Hadinata.

Over the last eight years, the Gang Gang name has become synonymous with burgers. You’ll often find it popping up at festivals, and its brightly hued food truck is almost always accompanied by a queue. The Wynn-Hadinatas are no strangers to the CBD restaurant scene. They previously ran the twin Hindley Street stores 99 Gang Social and Thirsty Tiger, which they closed to focus on Gang Gang’s Eden Hills location and frequent pop-ups.

The pair still used the Hindley Street stores to prep and host events, but as their lease was coming to an end earlier this year, they were on the hunt for their next chapter. So when a space became available inside The Market Shed on Holland, where Gang Gang had hosted recurring pop-ups, it seemed like a natural fit.

“It was all very organic this time around,” says Nina. “With our lease ending on Hindley Street, we needed a new space. We knew there was a demand [in the city], and people were asking us [to open something new]. Eden Hills is a little bit further away for everyone, but this is very central.”

The character-filled space in The Market Shed – which is quite logically called Gang Gang on Holland – is painted green.

“We’ve had our fun and we’ve done the red and white and we have done the Thirsty Tiger and the 99 Gang Social and all of those things,” Nina says. “We really wanted to home in on what Gang Gang started as, [with something that] could be cohesive with the trucks, so we’ve gone back to our original green.”

“We’ve left the original bricks all through the property,” says Morgen. “There’s some old wooden features and the big roller doors. We’ve just added in a little bit of our style.”

On the food front, the couple are sticking with what they know.

“It’s that takeaway and simplified menu. We’re not doing too much. We’ve tried to do it all and found out what works for us,” Nina says.

You’ll still be able to find burger favourites like the Cardi B fried chicken with salsa; the all-American Cali Love with animal sauce; and the smashed beef burger known as God’s Plan.

Mozzarella spring rolls – which debuted at Tasting Australia Town Square this year – will be a new addition to the permanent menu at Holland.

For their city location – mostly catering to those office workers – they’ve added a build-your-own section to the menu. Patrons can choose their own adventure, adding avocado, hash browns or pickles as they wish.

“It’s great for picky eaters as well, and also people on a budget,” Morgen says.

“We were trying to figure out how to make it so Gang Gang is accessible for everybody,” Nina adds. 

Gang Gang on Holland opens on Thursday August 6.
