Coming Soon: Ino Paninoteca Brings Nonna’s Meatball Recipes and Packed Panini to Prospect

The team behind The Cannoli Box Co is opening a second Prospect store serving rustic Italian panini filled with local produce and family tradition.

After nearly five years running The Cannoli Box Co, John-Paul Romeo is going savoury. When the space adjoining his current Churchill Road premises became available six months ago, Romeo, already planning an expansion, jumped at the opportunity.

The narrow shopfront has been transformed with marble countertops, Tasmanian oak cabinetry and cherry red bench seating. There will also be a photo wall that pays tribute to Romeo and wife Liana’s grandparents and great grandparents. The small yet thoughtfully designed space aims to evoke an Italian street-side eatery, where quality ingredients and simple flavours reign.

"We wanted to offer something that complements what we’ve built with The Cannoli Box Co,” Romeo tells Broadsheet. “Our customers have been asking for more savoury options.

“We’re passionate about using in-season, organic produce, when possible,” says Romeo. “Our grandparents grew everything from tomatoes to eggplants, and we want to keep that authenticity by partnering with local producers.”

When the panini bar opens in October it will serve traditional flavour combinations and more modern twists. On opening weekend you can expect Cuzzetiello Napoletano, an Italian bread pocket typically filled with homemade sugo and polpette. “It’s my Nonna Tina’s recipe, and it’s been a favourite in our family for generations.”

Doors are yet to open, but as Romeo puts it, “We are already planning for growth.” There is a liquor licence for evening antipasto, and Romeo wants to host community sausage sizzles in the summer. “Think fennel and chilli sausages with a range of Italian condiments.”

Ino Paninoteca is set to open on October 5, 2024 at 102 Churchill Road, Prospect.
