One of Australia’s leading advocates of low-waste cooking, multiple award-winning chef Matt Stone, will take over the Shōbōsho kitchen on Sunday August 25.
Stone is the co-executive chef of the Yarra Valley’s Oakridge Estate with his partner Jo Barrett. Together, they've steadily built a reputation for using local ethically farmed and foraged produce as the norm, rather than as the exception.
Early in his career, Stone worked closely with Joost Bakker at Greenhouse in Perth and Brothl in Melbourne – one of the country’s leading lights in sustainability. At Oakridge Estate, Stone and Barrett have designed their menu around a zero-waste philosophy, growing much of their produce on-premises and sourcing what remains from local farmers.
At this one-off takeover, Stone and the Shobosho crew will deliver a five-course menu, paired with Oakridge Estate’s premium wines.
