Farmed Table at Ngeringa
Brendan Cato is always on the hunt for local, sustainable organic produce. The Sydney chef gathers ingredients direct from farmers and producers, then plates them up for his pop-up dining series Farmed Table.
This Sunday he’s bringing the series to Ngeringa for a long lunch made only with produce from the certified biodynamic property. The five-course meal will feature “whole animals, wood ovens [and] amazing vegetables”, says Cato, which will be matched with Ngeringa’s wines (including current and back vintages).
Cato’s no stranger to the Adelaide Hills vineyard; he’s helped out winemaker Erinn Klein and the team for the past four vintages. Broadsheet stopped by around this time last year to catch a glimpse of harvest. Our writer noted Klein, who's in charge of every aspect of the winemaking process, is “less like a conductor than a one-man orchestra, trying to be everything to every wine”.
Sunday’s lunch will also double as the launch of Cato and Klein’s wine collaboration, Ngarto, a “playful côte-rôti-style” shiraz-viognier blend. Guests will also be able to taste freshly fermented wines out of the barrel.
