Allegra Dining Room
Next month Federico and Melissa Pisanelli will open Allegra, an intimate 28-seat dining room above their flagship Gilles Street restaurant.
The 10-dish set menu, developed by chef Elliot Vials (who’s been cooking at Etica the past 18 months), will combine “traditional and innovative” cooking methods for a seasonal, full-course dinner. It will be entirely plant-based, an extension of the ethical-sourcing philosophy that governs Etica.
“The aim is to create a menu that respects the produce, giving ingredients the energy and time they deserve, whilst appreciating and preserving the hard work that comes before us,” Vials said in a press release.
Melissa describes the menu as a “thoughtful compilation” of dishes, “celebrating what’s in nature in a refined yet relaxed setting”. Straying from Etica’s Neapolitan roots, Allegra won’t be bound by any one cuisine, Melissa confirmed to Broadsheet.
The wine list will be “a classic and contemporary ensemble, equally evolving to reflect seasonality”.
Allegra Dining Room will open on August 1 and serve dinner Thursday through Sunday, priced at $70 per person. Reservations are essential, though walk-ins will be accommodated with a bar menu.
