The popularity of Steven ter Horst’s salted caramel sauce became clear when it went from filling fleur de sel chocolates and salted caramel tarts to lining his store’s shelves in 200-gram jars.

After moving from his flagship Malvern store, ter Horst opened on Rundle Street in late 2013. The shop’s bare brick walls and concrete floors are in stark contrast to the glossy chocolates and desserts displayed in glass cabinets along the front counter.

The chocolates come in flavours with female personas, such as Zoe, whose splattered chocolate shell encases a strawberry confit and balsamic ganache. There are rich chocolate tarts and nutty gateaux, and you’ll even find the odd fruit- or vanilla- flavoured dessert if you’ve had your fill of chocolate.

Alongside coffee and a range of hot chocolates – made from steaming ganache, no less – the cafe also sells house-made ice teas and sodas.

A long wooden table stretches the length of the chocolate-filled display cabinets. On special occasions it’s the scene of a three-metre dessert degustation, but during regular hours it's filled with customers sating their sweet tooth. Couples will find nabbing one of the smaller, more private tables a little trickier.
