Republic is a suburban pub that knows exactly what it’s doing. Sure it’s got a gaming room, but it also cures its own bacon, roasts a whole suckling pig on Wednesday nights and hosts live music in its sprawling beer garden.

It’s popular with the after-work crowd that wants to avoid the city. Management knows it, providing the space and specials that city bars can’t.

To eat there’s the signature daily rotisserie, with a recommended wine pairing; crispy-duck salad with pomegranate, radish and fennel; chilli lobster claws with squid-ink spaghetti and baby clams; or peanut butter parfait with berry jelly and peanut brittle.

The wine list is comprehensive, with a heavy South Australian influence. Cocktails come by the jug or glass and change with the seasons, but always include Republic’s Espresso Martini, which doesn’t come by the jug but costs just $5 during Friday’s happy hour.
