The intention was never to make Baddog hidden or secret, but Zac Markov likes that finding his bar requires a little effort. The quiet location, the nondescript wooden door and the lack of signage all act as natural filters to attract the kind of laid-back crowd this bar was built for in 2015.

Wood, steel and booze are three of Markov’s favourite things and they all feature heavily in the dark and bluesy space. Citrus-oiled jarrah rescued from a house demolition was used for the tables, shelves and bar top. Hanging steel mesh dividers create privacy between the leather seated-booths.

After many years working in bars in Adelaide and overseas, it was important to Markov that his be stocked only with top-notch booze. For a bottle to make it onto his shelves, it has to be one that he enjoys himself, so that he can talk about it honestly and enthusiastically. Of the 120-plus shades of booze behind him, he’s most passionate about his whisky and gin collections.

You won’t find any menus here. The drinks list is the bottles on the shelves, the cocktail menu is in the barman’s head and they don’t serve food. If hunger gets the better of you, Markov’s not opposed to ordering in, so long as you don’t bring down the tone of the joint with something greasy from the Colonel or the golden arches.

Most Friday nights there’ll be live music at Baddog to let you know they’re there. On any other day, if the light’s on, they’re home.
