Notable Chef

If you’re familiar with the LL Wine and Dine in the Llankelly Place alleyway of Potts Point, then you’ll know that brothers Matt, Chris and Tim Barge have hospitality in the their blood. PaperPlanes in Bondi is lucky to have the addition of Phil Capaldi to the team. PaperPlanes is a Japanese-inspired eatery and bar, drawing on influences from Tokyo pop-culture and mixing contemporary Japanese cuisine, cutting edge music and a carefully curated sake, wine and cocktail selection.

The focus here is the multi-sensorial experience for diners of a 10-metre ‘rock, paper, scissors’ bar that includes bartenders, DJs and sushi chefs all working side by side to create an unusual and undoubtedly unique dining experience.

Head chef Jin Kung comes to PaperPlanes direct from LL Wine and Dine and the menu includes sake flamed teriyaki chicken, squid ink buckwheat risotto and PaperPlanes gyoza finished with lemon and wasabi foam. It’s a sharp venture, just like its aluminium origami.
