Location isn’t everything, but when you’re a small bistro relaxing into a 150-year-old reclaimed sandstone corner locale – heritage listed and perched up in Darlinghurst – it certainly helps.
Neatly named for its location at the corner of Forbes and Burton streets, there are a couple of important things to know about FAB. First, they pride themselves on being all about organic, sustainable and excellent quality produce (and always have). The place made its name on the back of this kind of commitment to quality and the influence is still going strong with present head chef Paul Pereira (ex Finefish).
Current owners Mandat Lieu and Hy Tri To picked up the reigns in early 2010 and their aim to maintain the highest of standards is certainly on track.
The coffee is excellent and comes courtesy Golden Cobra, and there’s attention to detail in everything, from seasonal menus, right down to the cleanest water glasses we’ve seen – a nice touch on a muggy Sydney day. The view to the restored 1841 Darlinghurst Gaol across the street – now the National Arts School – just adds to the historical dynamic of the place.
Make a b-line for the bi-fold window that becomes a street-side seating arrangement by day.
