Bondi Bikkies is the baby of former Tassie chef, trained nutritionist and accidental baker Sarah Glover. And it’s the passionate surfer’s dedication to crafting the best ‘bikkies’ around that has seen the business go a little bit crazy of late.

Take a bite into one of her treats – which come in sugar-free and gluten-free versions as well as the incredibly indulgent – and it soon becomes apparent that all bikkies in this world are not created equal. “In the kitchen, it’s always been important to me to not only be creative, but to hand-make everything from the best ingredients around,” explains Glover. “‘No cookie cutters used’ is more than just a slogan here. It’s about the art that is great baking.

Stocked in over 90 cafes around Sydney, Queensland and more, Bondi Bikkies has finally opened a bakery and shop in North Bondi so 'bikkie' addicts can purchase warm from the source. “We’re just baking and selling here at the moment, but in a few months we’ll have a wonderful pour-over coffee bar happening, plus a wider cafe menu. It’s going to be super kid-friendly too”.

As well as her new Bondi Bikkies shop, Glover has also kicked off a fledging arm of her business in New York of all places. “We’re stocked in five cafes, but already have a waiting list of new customers,” she says. “It’s the muesli bikkies that are leading the way…they’re like giant Anzacs, so the flavour for Americans is quite unique and very Australian. The Hipster Brownie is also really popular.”

As for at home? The Muesli Cookie, Choc Oat, Health Nutta and Bite-Me are just a few of the top bikkies baked daily. Plus there’s the Bondi Bikkies muesli range.
