For those of us who enjoy the sweeter things in life, Maze has relaunched their pop-up dessert bar.

Maze’s master pastry chef Dan Fletcher is whipping up an exotic fruit pavlova, before we’ve even finished our first drink. Manning the sizeable marble bar that doubles as our table, the young British chef amiably answers questions and explains his creations as we gaze transfixed on the tiny edible works of art being assembled in front of us.

Maze first ran the pop-up dessert bar over the Easter long weekend and due to the positive response they’ve decided to reopen it until the end of July.

The bar is located towards the front of the Maze restaurant, somewhat separated from the expansive main dining area. It works well for those who aren’t dining at the restaurant and just want to drop in for dessert, which you are more than welcome to do.

Dan is no stranger to the Gordan Ramsay empire, having worked at various Ramsay establishments in London and New York before relocating to Melbourne in 2010, where he is now happily putting out dishes like white chocolate yuzu jelly with eucalyptus ice cream.

The menu is ever changing and we don’t want to get your hopes up, but if you’re fan of coffee and the coffee ganache with salted caramel and hazelnut ice cream is on the list, it’ll be a sure favourite.

The pop-up dessert bar will run every Friday and Saturday 7.30pm–10.30pm until the end of July at Maze.
