Riemer & Cash Open Their Union Dining Room

Union Dining opens its doors in Richmond and realises a long-term goal for two friends.

nion Dining - the new dining room in the heritage-listed Union House on Swan Street, Richmond, where Greek restaurant Laikon used to stand - opens its doors to the public tonight. It sees the collaboration of long-time restaurant professionals and mates – chef Nicky Riemer, most recently executive chef at Melbourne Wine Room, and former front-of-house manager at Cutler & Co, Adam Cash. The two met about 10 years ago and decided then to eventually do something together; the goal finally got momentum last year. “We started to talk about it seriously about a year ago,” says Riemer, “and with the support of two silent partners, it feels great that we’ve got here already.”

The room has been designed by architects Peckvonhartel. “We wanted to create a space that has a relaxed feel, like an Italian trattoria or French Bistro, with comfort and warmth – not austere at all,” Riemer says. This Euro-feel translates to the menu where Riemer has produced a selection of share-plates, appetisers, salads and mains. “It’s provincial,” she says, “simple and robust, based around quality ingredients.” The wine list by Cash and beverage manager Greg Lightfoot supports the menu with a smart selection of European and Victorian wines.

Union Dining is open for nights only at the moment with a view to open for lunches and weekend breakfasts a couple of months away.
