Every element has been considered in this space. The wine list has been created by Dan Sims and the team from The Wine Guide and the thoughtful selection of wines that enhance Cantonese flavours present a list rarely seen in Chinese restaurants in Melbourne but one gets the feeling pretty quickly this isn’t just any Chinese restaurant.

“Mahjong Black will focus on a different presentation of Chinese food,” says owner/operator Max Tsang, “that is more sophisticated and with new dishes too.” The succinct menu is structured around entrees, mains and desserts, don’t go to Mahjong Black expecting the expansive menu you often find in Chinese restaurants around town, Tsang is wanting to give Melbourne diners something a little different. The manager of Mahjong Black is Charles Phan who was at Flower Drum for eight years and most recently was manager of Man Bo in Geelong and head chef is Wah Feng from Mahjong St Kilda, so the focus and experience is there as is a different mindset, explains Tsang. “This isn’t a Chinese restaurant, it’s a restaurant that serves Chinese food.”
