La Belle Miette’s macaron flavours have evolved and will attract the most sophisticated palettes. The new flavours include earl grey, salted caramel and kir royale. “The kir royale macaron was created for Bastille Day,” she explains. “We infused the mixture with Mo?t and Chandon Champagne and the centre has crème de cassis.”

La Belle Miette hasn’t forgotten its original vision and the design of the store exudes classic French style. The new store, however, is closer to the heart of the macaron cooking and production. “Our kitchen is directly behind this store, which means I can bake and give personal service to our customers,” Tsoi says.

The expansion is also a win for those macaron lovers for whom one is just not enough. La Belle Miette’s kitchen receives large event and wedding catering orders too. “We are designing special boxes for the Spring Racing Carnival so that will be our next big event season.”

La Belle Miette still maintains its attention to detail and treats macaron baking like an art form. “Sometimes we make over 2,000 macarons a day and we definitely don’t use all of those,” she says. “I want our stock to look beautiful, so we only sell the very best ones.”

Macarons are priced at $2.50 each and are gluten-free.
