Chester White is both a breed of pig and a new restaurant in Hawthorn where chef Simon Arkless is in the kitchen, cooking up a storm (and a few pigs).

C

hester White has opened in Hawthorn where the restaurant Canvas once sat on Burwood Road. Former executive chef of Comme, Simon Arkless and business partners Glen Bagnara, Roy Zandona and George Sykiotis have opened up the space to create a large but welcoming room with lots of white and playful touches of yellow.

Arkless has created a menu that is flexible in its approach, with appetisers and pizzas are available from midday to 11pm daily, as well as a full menu for lunch and dinner. Many of the dishes are signature Arkless: classic technique with clear French, Italian and Spanish influences in flavours and textures. Fried Padron peppers with sherry vinegar and aioli or Otway pork belly with quince aioli and celeriac slaw sit alongside Mt Martha mussels with cider and shallots or roasted Milawa chicken with lemon and tarragon gravy.

The name was chosen as a nod to all things pig and with the experience behind it Chester White has the potential to become a hub of good food and wine in the eastern suburbs.
